    Clay Smith

    Operations Manager at Moonshine University and former Head Distiller at Corsair Distillery

    Clay has been in many facets of the liquor industry since 2003 and with Corsair Distillery since early 2009. In addition to the daily “Cat-Herding” of the distillery’s experimental spirit development, core product manufacturing, barrel blending, bottling, packaging, shipping, copious paperwork and various site expansions in the past 5 years, Clay also teaches Fine Art at Western Kentucky University.

    His love and experience with most things Craft, whether artistic or alcoholic in nature, found a unique home with Corsair’s philosophy.

Event Details

Botanical spirits are experiencing a booming renaissance. Using a broad palette of botanicals and styles, craft distillers are creating unique expressions that not only stand out on the shelf, but don’t have to spend years in a barrel to do so. 

Join us for this three-day intermediate workshop focusing on botanically-based spirits. Explore the history, production methods, and distillation processes of gins, absinthes, and amaros while you learn about mash bills, maceration, and filtration.

INSTRUCTORS: Clay Smith, Head Distiller and Distillery Manager at Corsair Artisan Distillery and Moonshine University instructors.
