Southern Tier Distilling Craft Spirits


Straight Bourbon Whiskey – Beautiful vanilla and leather-scented, deep golden brown bourbon. Smooth caramel and oak, lingering like the last light of day on the waters of nearby Lake Chautaqua. Rye Whiskey – Rye never became trendy in Western New York. It’s always been beloved here. The result is a smooth butterscotch and oak flavor with a spicy, pepper nose and a classic NY rye peppery finish.  Learn more.

Smoked Bourbon Whiskey – Beautiful vanilla and leather-scented, deep golden brown bourbon. Smooth caramel and oak, lingering like the last light of day on the waters of nearby Lake Chautauqua. American Whiskey – Our American Whiskey starts with wheat and corn grown nearby our distillery in Lakewood, New York. To age it, we use hand-charred, locally grown and milled white oak staves. We then finish it in whiskey barrels that have been aged with maple syrup in the spirit of true pioneers. Oaky and vanilla notes with toasted oak, dark coffee and subtle sweetness on the palate.  Learn more.

Bottled-in-Bond Bourbon – Since 1897, Bottled-in-Bond has been the highest quality standard for aged bourbon in the country. Our first batches of bourbon were distilled during the fall of 2015, barreled, and carefully stowed away. Sixteen seasons came and went before we released this bottle with its special Bottled-in-Bond distinction.

Being patient certainly has its benefits. This four-year-old bourbon has aromatic notes of caramelized sugar and almond, with hints of cigar box and worn leather. The forward heat on the palate is balanced by softer characters of dried stone fruits, resulting in a layered complexity of flavors and a lingering sweetness. Learn more.

Vodka – This is vodka born from the land it calls home. Made from 100% New York State wheat and filtered to create smooth, clean spirit, this vodka still remembers when glaciers filled the valley here, which is one of the reasons it’s so good on ice. Learn more.

2x Hopped, Hop Flavored Whiskey – The true beauty of having both a distillery and a brewery? We get to marry beautiful things together. Our crew at Southern Tier Brewing Company brew beer with copious amounts of piney hops. We take the wort from the brewing process and ferment, dry hop, and distill it into this uniquely aromatic and award winning spirit. Learn more.

Gin – A proper gin, with a nose of intense juniper and subtle notes of fresh orange and coriander. Pine forward on the palate with a slight spice and a pleasant, lingering, dry aftertaste from a botanical recipe that includes coriander, angelica root, grains of paradise, cardamom and anise. Cinnamon Candy Apple Whiskey – he candied apple is a classic standout treat among so many festival favorites. Now, imagine a grown up version, soaked in whiskey, with spicy cinnamon balanced by caramelized sugar and notes of refreshingly tart apple. Learn more.

Maple Aged Spirits – Here’s the beauty of taking a classic Caribbean liquor recipe and reinterpreting it to reflect the spirit and place of where it’s distilled. You create something that tips its hat to the past but doesn’t live there. And this lively spirit, made with blackstrap molasses and local maple syrup then finished in bourbon barrels for a sweet maple and vanilla taste profile definitely captures the here and now. Learn more.

Barrel Reserve Gin – Aged for more than two years in bourbon barrels. The gin we make is a cocktail lovers dream. In true Southern Tier form, we’ve made a good thing better by barrel aging our London dry gin in bourbon barrels. The Southern Tier Distilling Company Story
Start distilling in Western New York?  Why the hell not?


In October 2015 Southern Tier Distillery was granted our New York State “Farm Distillery” License. Since that day we have been working to not just make one
outstanding spirit, but numerous spirits to satisfy the tastes of many. Committed to being a farm to glass distillery, almost 90% of what goes into our products comes from local farms.  All of our products are distilled and packaged by hand by our team
members.

With our tasting room opening in August 2015, we were able to tease our customers with samples of each of our spirits. After getting an incredible reaction we knew we needed to do more and we needed to do it quick. Playing off Southern Tier Brewery’s “The Empty Pint,” soon the distillery’s tasting room “The Empty Bottle” was created. We began serving handmade cocktails
following our guidelines of “farm to glass.” Original cocktail recipes were created with fresh squeezed juices, Southern Tier spirits, and old faithful, our taste buds.

With word getting out that Southern Tier had created a distillery and was now
selling spirits, the orders came flowing in! We soon were distributing to local counties within a few short months of opening and our growth continues with our spirits
available in 8 states.
