Castle & Key Distillery in Frankfort, Kentucky has announced their latest seasonal release to emerge from the distillery. Rise 2021 Seasonal Spring Gin is the latest release made using a thoughtful selection of seasonal botanicals that share many of the same flavor components to create a base of citrus, floral and herbal notes.
Unlike many distilleries that have a unique mash bill for their gin or vodka Castle & Key begins their distillation run with their standard rye whiskey mash bill. That’s likely what make their gin unique since this is created using more small grains than most gins.
“While last year’s spring release was more citrus forward, this year’s seasonal gin offers a balance of floral and dark fruit tones and aromas that are reminiscent of the spring season,” says Brand Ambassador and Blender, Brett Connors. “We’re so proud to share another spring release that focuses on unique botanicals, rather than just focusing on consistency in a flavor profile year after year.”

Castle & Keys Quality Manager Jon Brown added, “Rise Gin uses the same mashbill and production methods as Castle & Key’s rye whiskey up to the barreling stage. Instead of putting the distillate into barrel, it is redistilled into vodka, and then redistilled once more to allow the alcohol vapor to pass through the gin baskets, infusing the vapor with the essential oils and other flavor compounds contained in the botanicals. The vapor is then condensed back into a liquid, resulting in Castle & Key’s Rise 2021 Seasonal Spring Gin.”
Rise 2021 Seasonal Spring Gin Tasting Notes
The Spring release was created using Galangal Root, Lavender, Elderberry, Earl Grey Tea and Wintergreen botanicals have never previously been used in Castle & Key seasonal releases.
Mashbill: 17% Yellow Corn, 63% Rye, 20% Malted Barley
Botanicals: Juniper, Coriander, Galangal Root, Lavender, Chamomile, Elderberry, Earl Grey Tea, Winter Green
Aroma: Elegant floral complexity highlights the nose, complemented by sweet notes of blueberry, lemon peel and honey
Taste: Sweet lavender and chamomile rounded out by moderate dark berries and currants with light citrus and subtle spice
Finish: Lightly sweet with lemon peel and white pepper
Castle & Key Distillery’s Rise 2021 Seasonal Spring Gin botanical forward spirit is bottled at 94 proof (47% ABV). The Spring 2021 Gin will be available at the distillery starting on April 22 with a suggested retail price of $36.99. It will be available in Kentucky, Tennessee, Indiana, Georgia, Texas, and South Carolina at the end of the month.
